I'm trying this one, am marinating it now.
Will cook it tomorrow.
So when comparing the ingredients of this recipe to PackfanMatt_12 (http://kingsforum.net/live/member.php?7-PackfanMatt_12)'s (Super Bowl Recipe Thread (http://kingsforum.net/live/showthread.php?310-Super-Bowl-Recipe-Thread&highlight=jerk)), this additionally has:
* cayenne pepper
* sage
* cinnamon
* garlic powder
* white vinegar
* orange juice

I also thought it would be better if that thread was left to contain only roasted chicken or tamale content, to make it a little easier to follow. So if I have a question and need to bump it, someone can still follow the conversation of the latest posts.

Cool. How much orange juice is used? That sounds interesting..
1/2 cup. This marinade looks dark, like soy sauce.
PackfanMatt_12 (http://kingsforum.net/live/member.php?7-PackfanMatt_12)'s looked green, probably because of the amount of green onions that one called for (I used two bunches I think).
I'll take a pic of it just before I cook it, and then after.

Here it is. It's hard to compare the taste of this to PackfanMatt_12 (http://kingsforum.net/live/member.php?7-PackfanMatt_12)'s. That one had a drier taste.
This one, I think the vinegar made a difference, it had a vinegary taste. Also just a different flavor. I think the ratio of green onions for the last one just made it different.
I like this one a little more.
Thoughts?

So that looks like a lot of marinade in the first set of pics, but then later, there's only a small amount on each piece of chicken. Why is that?
It looks tasty though. Did you try it yet? How big of a factor was the orange juice (or how well were you able to pick up on that taste?)

Yeah, the first two pics were marinade.
There's only a small amount, because I removed the chicken from it, put it on the glass baking dishes, and cooked it. I didn't cook it with all of that marinade, just whatever pieces latched onto the chicken.
Yeah, I tried it. It's good. That's why I said it had a "vinegary" taste to it. (This recipe did call for vinegar). I wasn't able to pick up on the orange juice.
You could taste the flavor through the chicken, so that was good.
What's weird is that the recipe calls for juice from one lime. But I used a whole cup (which was about 11 squeezed limes). And I'm not sure what impact it had, lol. I figured that Jamaican dishes use lime, so I wanted to use more rather than less.
Overall this came out juicer than the previous Jamaican recipe, probably because this recipe was more liquid, while the other one was more solid.
I'd try and make it a little spicier though. I used 4 habanero peppers, but I'll try 5 next time.
Neither of these recipes taste like the jerk chicken I've had at Jamaican restaurants, but they're still good. But I've looked up a few recipes, and they seem to be using the same ingredients.
