From reading into it more pitch type is really just speed, pitch type, and small things. PITCHf/x type includes delivery motion, angle at each moment of delivery, where the ball is at delivery, location with each pitch, speed with each pitch and movement of the pitch, and even more

So it looks like PITCHf/x includes a lot more information about the delivery itself, while Pitch Type just seems to focus on the ball as it crosses the plate.
